Christmas Eve in Ginnyville

Ok, A1, here it goes

I'm gonna post these separate so I don't screw it up, LOL

Got some nice baccala, soaked it for a few days, changing the water daily.
Simple flour, salt, pepper garlic, eggs and parsley, cast iron pan and fried it till crunchy.

Made a couple of baked clams, whole belly, in the shell and added some chopped claims to the bread crumb secret mixture.

Couple of meats that just landed directly from Italy.

Pepper cured italian bacon was probably my favorite next to the homemade Soppressata directly from Calabria.

Next up, started a rue with a large can of clams, panchetta, oil, garlic and a homemade compote made with butter, shallots, parsley, garlic, salt, pepper.
Little flour to thicken it up before I added a 1/2 bottle of pino.

Let the muscles cook, threw in about 4 - 5 dozen shrimp and then spaghetti on top and let the love juices flow.

Oh, and lastly, made some zeppoli in the deep fryer while my minions were prepping the claims. No final product, but light and fluffy tossed in some powdered sugar.

There was a red sauce with calamari as well along with some home made pizzas for the childrens and some mac n cheese that was so thick you could pick up handfuls chunks of it.

Home made 7 layer cookies and amaretto cookies didn't make the pictures along with the 1/2 bottle of scotch it took for me to cook all thing.
