Cooking Bear Meat

I've only had bear meat one time, and I jacked it up cooking it, so I didn't like it much.

You guys that eat bear meat, how do you cook it?

I know the meat tastes more gamey depending on when it is killed....ie, spring bears compared to fall bears.

I cook it up in a pan and feed it to my dog. I am not a fan.

On a serious note if you have some gamey meat I will either grind it up and add a lot of pork or I will throw it in the smoker.

Crock pot or grind is usually what I do up here, roast simmered in the pot and used as a stew meat or ground and used in tacos etc.

Get it HOT like pork or you risk Trichinosis so at least 170 for me, also if you have killed it yourself get as much fat off of it as possible right away or it can make the meat taste wierd, if you just got it as a gift etc still trim as much fat as possible before cooking it.

I usually tenderize it with sea salt for a couple days rubbed in really well after a light coating of olive oil, then I rinse it all off again before spicing for the cooking and flavor spicing.
Hell of a lot of protein on them and some people waste it, try a few different things like sauces and GRAVY lol it can be good stuff.
Get on up here and we can run over to the Selkirks and you can get your own

Never had it. Steve Rinella says black bears eating blueberries is the best meat he has ever had. Coastal bears eating salmon taste like fish.

I love "meat eater" I have seen every episode.

Crock Pot slow cooking all day with potatoes and carrots...

Does not taste like the moose I got last year but bear can be pretty good. I only eat a fall bear, if I hunt em in the spring I do so in SE Alaska and you can donate all the meat to the community..

Almost forgot I posted this, lol. I want to give bear another try. I'm gonna take your tips and use them if I get another run at it.

Smoking would be interesting.
Grinding would be cool, never thought of that...bear burgers? lol
I like the idea of making tacos!!!
Crock Pot/Slow cooker with potatos, veges, and making a gravy would be on the list too.

GF, after my first run with eating it, I threw in the towel, but a bunch of people told me I cooked it wrong. Smoking and grinding i'll do for sure.

LG, like I said in the other thread, MN is on my to go list, and if I ever make it up there, i'll hit you up first thing. You have to stay alive though man

JG, that would make sense on the berries vs salmon tastes...think i'd prefer a berry eater. Fukk, first time i'll go vegan, heh heh heh

Tiny, Alaska is everybody's dream visit...on the list too

From hoof or paw to the table, I do everything myself. Chicken is the only meat I buy and it is because raising chickens for butcher is a pain in the ass. My chickens are for eggs only.

I am thinking about butchering my goats if my son does not get off his ass and sell them, like he was supposed to do.
