The parmesan is optional, it adds a lot to the taste but also to calories and fat. good luck!

Very cool, now use that as a starting point and change bits to your taste, more garlic, some hot pepper flake, stuff like that. it will even make a Vodka sauce by adding a splash of vodka and some tomato puree.....

and for the weekend of football a low call healthy relish, use with chips or on chicken and fish. this is a party size recipe so if your on your own cut it in half....

Tomato Avocado Salsa
2 ea Avocado, diced
¾ cup red onion, diced
3cups tomato, diced
3 T cilantro, chopped
2 ea lime, juice
1 tsp chopped garlic
1 T cholulah (my favorite hot sauce)
to taste salt and pepper

Combine all ingredients

You'll like it chilled for lunch as well, it really takes on some flavor!

Oh, on a different meal, with coconut recipes, if you toss just a bit of soy into the mix the salt will moderate the sweetness, also, a spicy condiment will help as well!!!

Now that you have the chicken we need to keep it from getting boring...

Praline Peach Relish
2 cups peaches...fresh is best, frozen will work, never canned
¼ c minced red onions
¼ c minced red pepper
2 T mint, finely chopped
1 T rice win viniger
1 T Cholulah hot sauce
2 oz peach schnapps
1/4 cup toasted pecans

Combine all ingredients.

as always, if your cooking for two or less cut the recipe in 1/2. this will be fresh and bright to liven up that chicken on day three!!!

The coconut had ground red pepper, said dash, could have used a bit more to give the sweetness a little bite.
