Chicken Meatballs (easy/healthy)

A family owned store opened up down the road. Ground chicken is $3/lb. So I bought a few pounds and tried something different (for me). Obviously you could use any preferred meat and double or triple the recipe for more.

1 lb ground chicken
1 egg
1 onion finely chopped
1/2 cup quick oats

salt, pepper or whatever seasoning you prefer. I used sazon goya.

A 1/4 cup scoop raw yields (roughly) a 2 oz cooked meatball.

Bake 25 minutes at 375

Easy to prep, easy to cook, easy to pack and easy to eat. You can use bbq sauce or a little spaghetti sauce as a dip if you like but they're good without.

If your carb sensitive or on a cut you can take a head of cauliflower, break it into pieces and through it in a food processor, grind it until its fine kernels (pulsing works best)
a quick 2 min blanch in boiling water and you can use it instead of noodles or rice...

That is one ground meat I just cant do. I find ground chicken disgusting. Texture, flavor, yuck. At least ground turkey is edible.

Odd, I don't notice much difference but either way, you can use turkey as well.

We prep ground beef, chix and turkey this way adding italian seasoning and/or garlic, pepper blends, cheeses, adobo and anything else to add more and different flavor.

Nice, that is a good simple recipe. Are they firm or squishy? I could not eat a squishy meatball.

Firm. They're like a blob on the cookie sheet but firm up like a regular meatball upon cooking. You can add some extra oats to firm them up if you like. It's not an exact science but a super simple recipe template. I made a few pounds and put them in an airtight container and grab a few for a quick protein snack.
