GF, Try this one out. I just came off keto for a bit to work on my macros but I love a key lime cheesecake and this is the bomb. You don't need any topping. Play with the sweetener a little as you mix it but it is excellent and no topping is needed.
Crust 1 1/2 cups almond flour 1 Tbsp sweetener 5 tablespoons of butter (melted) Mix the ingredients up before adding the butter. After you add the butter you can push it down with your fingers into a 9 inch pie pan. Filling 3/4 cup sweetener 1 teaspoon vanilla extract 24 ounces cream cheese (room temperature) 3 eggs 1/4 cup of key lime juice Bake at 350 for 60-70 minutes. No topping required The sweetness with the key lime is perfect. You can also use regular limes if you can't find the key lime. ~PM

Baking is a finnicky science brother... just a bit too much of 1 ingredient and poof.... either mush cake or mortar cake... which did you get?
