Simple and Yummy


CRACKER CRUSTED COD
(3) 2 oz. Square-cut cod loin
Clarified butter
Old Gulf Seasoning
Finely-ground Ritz Crackers

Season cod with Old Gulf. Dip top of cod into clarified butter and then press into Ritz Cracker crumbs.
bake at 350 10 - 15 min

6 SERVINGS

3 large oranges
3 tablespoons olive oil
3 cups thinly sliced red onions
3 garlic cloves, thinly sliced
1˝ 14˝ -ounce cans diced tomatoes in juice
1 cup dry white wine
1/3 cup sliced pitted Kalamata olives
6 5- to 6-ounce cod fillets
3 ounces drained feta cheese, thinly sliced
3 tablespoons chopped fresh chives.

Cut off peel and white pith from oranges. Cut oranges between membranes to release segments. Heat oil in heavy, very large skillet over medium-high heat. Add onions and garlic; sauté until tender and just beginning to brown, about 8 minutes. Add tomatoes and wine. Bring to boil. Reduce heat to medium-low and simmer 3 minutes. Gently stir in orange segments and olives. Season mixture to taste with salt and pepper. Sprinkle cod fillets with salt and pepper. Arrange cod in single layer atop vegetable mixture in skillet. Cover and simmer gently until cod is just opaque in center, about 12 minutes.
Spoon vegetable mixture onto plates. Top with cod. Place feta cheese atop vegetable mixture and alongside cod. Sprinkle with chives and serve.

Man easy. mix honey and soy sauce (leave thick)pinch of salt, chop a little onion and garlic and mix in. Marinate fish for an hour or so.

I put in the oven at 400 for 15 minutes until still a little raw in the middle. Then I put in a pan with melted butter and a little more soy and brown the fish both sides about 2 minutes each.

I let the fish sit for 5 minutes before serving on a warmed plate.

I would love to hear how A1 would modify this recipe. I use honey and soy sauce for a lot of things. Many times i add grated ginger or squeeze a lemon in it. It is really good all ways.

That's a good base for a lot of things Jipped things you might try using that as a base

1) Orange peel minced, cider vinegar and garlic
2) lime juice, jalapeno, tequila, green onion
3) molasses, mustard and L & P
4 ) sub V-8 for soy, then lemon peel, ginger and a dragon pepper or two
5 ) sub maple syrup for honey, add minced apple, craisins, garlic

Thanks brother. I need to be more adventurous.

sub maple syrup for honey, add minced apple, craisins, garlic sounds really good.

I have chicken breast in the fridge to grill tonight. Need maple syrup, got the rest.

Lime juice and jalapeno with margarita salt is a big player for me.

Keep the ideas coming brother. I will try them I promise.

Man those all sound so good. I’m back to counting my calories and macros so I have to be careful about the honey and such as that. I think maybe the soy without the honey sounds interesting. I had originally resigned myself to just doing a lemon pepper with some sea salt in the oven. May need to get some soy.

Ever try Bragg's liquid aminos? I do not cook with it but a couple of drops on my veggies tastes good.
