Do everything ourselves, we are outdoors people. Last year the wife and I skinned, caped and cut up my moose. 350 pounds boneless..Should have paid a butcher to cut him up LOL

Man, i'd love to learn how to skin my own meat as a basic survival skill....probably a must have skill to know if shit hit the fan. I know it's a lot of work, but I have to try this at least once, lol.

I've never had caribou, goat, moose, and I can't remember if I even had deer

Pretty much just beef, chicken, Turkey, and the usual...oh, and of course, bear once.

Skinning them is easy. It is butchering that can be a challenge if you want quality cuts. If you want to grind everything butchering is not bad either. You just have to make sure you get the glands out. Grind up a gland and you will never do it again.

If you guys have a butcher (or somebody) cut it up, how do you usually go about this?

Do you pay them, or just have them take some meat as compensation?

Bear makes excellent sausages. The bears I have harvested were eating oats and berries and were EXCELLENT table fare. The meat was tender and there was no need to cook it to death. I cut the chops out of it and made bear stroganoff and it was a good as beef. Roast was very good as well.

I have heard that if you get one that has gorged on salmon for it's whole life they can be fishy and strong. Mine and my bud's have been excellent.

Your best bet is to leave the meat inside the bear. I shot one bear in my life and it tasted like garbage.

Sorry, I've been busy just saw this


Mix this...

1/2 cup buttermilk
2 cups milk
2 TBSP baking soda
2 TBSP baking powder
1 TBSP salt

cut your meat into pieces ( if baking a roast using a thin long blade poke deep holes into roast)
Using enough to coat meat pour over bear meat in a dish just large enough to hold the meat in a single layer. soak room temp one hour... discard the milk solution (it will have turned brown) rinse the meat in cold running water... repeat this but the second time use the rest of the liquid hoping the meat is covered. place in fridge for two hours... discard milk again, rinse meat again.... it will now be much more palatable
