Give me some recipes to use jalapenos

My pepper plants are cranking them out. If I core them they are not wicked hot. They are good for you I think. (Also serranos and Thai peppers (These bastards have one purpose, to hurt you)

What do you guys do with jalapenos?

So I made Indian food the other night. I got some yogurt and mixed in finely minced onion, cilantro, jalapeno (de-seeded) and garlic. I put it on my food and it was good.

I finished off the Indian food and tried this stuff on my grilled chick. It was tasty!

I really only use them for two things. I add jalapenos to my eggs, whether scrambled or in an omelet, and I put them in my tuna salad sandwiches and wraps.

Cilantro Corn Pepper Relish

2 pounds frozen kernel corn
1 each Red pepper, diced
2 each Jalapeno pepper, diced
1 each Spanish onion fine diced
2 ounces Balsamic vinegar
¼ cup sugar
2 tsp Garlic, chopped
2 Tbsp Cilantro, chopped
½ tsp. Salt
½ tsp. Black Pepper (ground)


Combine , mix well

Balsamic Pepper Relish

1 each Red pepper, diced
3 each Jalepeno pepper, diced
1 each Yellow pepper, diced
1 each Spanish onion fine diced
1.5 ounces Balsamic vinegar
1 tsp Garlic, chopped
1 Tbsp Basil, chopped
½ tsp. Salt
½ tsp. Black Pepper (ground)


Combine , mix well

Apricot Pepper Glaze

1 jar Apricot preserves
2 each jalepeno, minced
1/2 C Brandy
1 C California garlic pepper
1 C chicken stock

Combine, simmer, chill


Brush this on fish or chicken just before pulling from the grill the sugar will burn easily

Ask and you receive.. this makes a big batch but easy to cut in half or quarter

Pickled Jalapeños
2 lbs Jalepenos halved and seeded ( you can also leave whole but must poke a whole in them
8 cloves garlic smashed
2 oz lemon grass, smashed
1 oz ginger, rough chop
4 c rice wine vinegar
4 c water
½ c sugar
¼ c kosher salt

Combine everything except peppers in sauce pot and bring to boil. once pickle liquid comes to a boil, reduce to simmer for thirty minutes and then pour over peppers and allow to cool in refrigerator. Portion in quart size deli containers and store in pickle liquid. Excess liquid can be saved for next use

Gonna try the Balsamic Pepper Relish this weekend and put it on grilled chick. I do not know what a spanish onion is. Yellow do fine? I have 30 in my garden. They are about 2/3 grown but when they all are full I will have a surplus.

I just did cream cheese bacon wrapped stuff jalapeños on the pellet smoker for the fam the other day and they turned out delicious
