Off today, got my ground chicken and I am going to do chicken meatballs and zucchini noodles with a butter alfredo sauce tonight for dinner. Substituting the crushed pork rinds for the oats.

Will tell y'all how it is.

They were OK. I prefer the texture and flavor of beef. BUT, my wife liked the chicken, said they were less heavy. So we will mix it in the rotation. Also I think when I come off keto they will have less calories than the beef.

I have another idea. I am going to make them and smoke them at 200 degrees until they get a nice smoke ring. then put them in some home made BBQ sauce like you said. I may have to add butter or oil to the ground chicken to keep em moist though.

Beef is better. Hands down. I am trying to reduce my red meat intake more these days and chicken is cheaper. My wife hates them; smell, texture and taste. Stubbs honey n spice bbq fixes everything lol

Stubb's is GOOOOOOOOD stuff. I can drink the beef marinade, seriously I take sips out of the bottle. HAHA

I may try a 50/50 mix of chicken and beef. Still cutting back on the red by 50% but maybe the texture and flavor will be there as well.

Meat balls are one of those things so easy to grab out of the fridge on a fork and chow when you are in a hurry. I suppose chicken breast is too but damn I am so tired of eating chicken breast

If you want keto meatloaf, crush up pork rinds in place of bread crumbs. add chopped up bell pepper and onion (And jalapeno if you like it hot) and avocado (Season the meat when mixing).

It comes out super moist and tasty. low carb and high fat.

I put tomato slices all over it before cooking and do salt and pepper on top of that. Or do low carb ketchup which ain't bad.
