Most people don’t realize you have to brine the bird to help remove some of the off taste of a duck....there is no saving a goose

Rub a duck with koshers salt all over the skin. let it sit in the fridge for 24 to 36 hours, rinse...
also look up Peking duck, the Chinese had a great way to make them palatable... Goose, hind quarters, salt as above, rinse, braise the legs and thighs, low simmer for 3 hours or crock pot. cool. remove meat from bones, The meat is now ready for stir fry, fricassee or a goose in gravy. make gravy fresh don't use the braising liquid Goose breasts, soak in 2 cups milk 2 TBSP baking soda for 12 hr's.. the milk will look awful, toss it and rinse the breasts, season with a poultry spices, Montreal seasoning or your favorite, sear in a hot pan in butter, once browned place the whole pan into a 255 degree over, roast about 45 min (longer if its a big bird), should be nice and tender

I've never really ate duck, maybe a small bit when I was younger, I can't actually remember to be honest. I always heard people talk about how it had to be cooked right, and not overcooked to be good, or worth eating. I also heard it had an acquired taste to it. I've heard duck fat was supposedly like the holy grail of fat for culinary too....not sure about that, lol.
