Hey A1, how do you prepare Sauerkraut? I don't want it to be like a brick on my poor stomach. Is there a way to make it easily digestible?

I would like to hear this too. I wondered if it were shredded more finely if that would help but I have no idea.

the cabbage fiber is a tough thing to break up. cross cutting and dicing will only go so far. Think about it this way, sauerkraut is made in a level of acid that nothing will survive in, YOU COULD CLEAN YOUR BATTERY TERMINALS WITH THE JUICE, YET IT STILL ISN'T STRONG ENOUGH FOR IT TO TURN THE CABBAGE INTO MUSH... just sayin.....

Here's one that is great for fall. Hit the farmer's market or perhaps you have your own garden. This will work an any hard fall harvest vegetable. Parsnips, turnips, acorn or butternut squash, carrots or even beets ..

Pickled Turnips
1 quart med dice turnips
½ c beet juice (any juiced veg will work, the beet juice gives good color)
1 ½c water
1 c champagne vinegar (any mild vinegar )
¾ c sugar
¼ kosher salt
¼ pickling spice, wrapped and tied in cheese cloth

Combine all ingredients in sauce pot and bring to boil. Then turn down to a low simmer for five minutes or until turnips are slightly tender, and cool. Store turnips in pickling liquid.

Shut the front door! I used to live on a turnip farm and have not had pickled turnips in 35 years! I loved them along with buttered turnips and of course king of greens....turnip greens (Yeah, they are better than collard greens....I said it and stand by it)

Also I love pickled radish, but that is a different story.
