Sweet Potatoes

Any idiot can grow sweet potatoes. Once you learn the right ratio of sand to soil to other items in the substrate you grow them in and you learn how much moisture they need etc, you can grow them very well in containers.

Once you learn how to cure and store the sweet potatoes you can store them for up to a year and have them be tasty and nutritious.

I know regular potatoes grow like weeds. sweet potatoes definitely have more nutrients.

What is the ratio of sand and soil?

Cant add anything about the growing... but I know they are tasty!!!!

SWEET POTATO GNOCCHI
3# Sweet potatoes rubbed with oil
1 ½ cups Flour
1 cup Semolina
6 T Instant Potato
2 t Salt
2 T Brown Sugar
¼ t Nutmeg
9 Egg yolks

Preheat oven to 400 and bake sweet potatoes for one hour or until tender through center. Remove from oven and let cool. Peel and mash with a fork. Add egg yolks to sweet potato and mix until combined.

Separately combine flour, instant potato, sugar, nutmeg and salt. One quarter at a time, add dry mix to the sweet potato mixture, folding just enough to combine. Repeat until all dry mix is incorporated. Cover and refrigerate for one hour.

To make gnocchi, generously flour surface. Place batter in a pastry bag with a ½” opening. Pipe out strip of gnocchi, dust with flour and roll until completely coated. Cut on an angle so pieces are approximately ¾” long diamonds. Freeze on parchment paper.

Its hard to say what ratio to use, or if you want to use soil and sand at all. The thing about potatoes is that you want a growing substrate that is low in nutrients. High nutrient substrate grows more vegetative matter and less root matter. Since the root matter is the actual potato, you want more root matter.

oh A1, that sounds so good. I love thanksgiving because we get to have candied yams.

I may try it in the spring with soil, sand and potting soil. our dirt here is hard and coarse. need to break it up. I love sweet potatoes.

I do know this, before you add the sand, add peat moss, lots of it. It's cheap but it really helps to condition the soil. Around here the soil is very clay based, what helped our gardens is mixing in the peat in fall and letting it winter over in the gardens, then manure every other year. It was a bunch of work in the beginning but the wifes gardens are beautiful and the soil is easy to work. It did take a couple years though...
