I made a crockpot version of beef and cabbage soup...... it’s ok but..... it just seems kind of dull. Not sure what else I should have done. I’m still doing the Keto thing so I didn’t bother draining the meat or anything. Like I said, it’s good but it isn’t great..


Here’s what I did


1 1/2 pound of ground chuck
1 onion chopped
2 carrots chopped
2 celery stalks chopped
Shit ton of cabbage
2 cloves of minced garlic
Maybe 7-8 cups of beef broth
1 tablespoon Italian seasoning
Salt to taste

I browned the beef and added it to the mix and cooked it in the crockpot for like 8 hours. It tasted much better when I added the Texas Pete to my bowl....

Any ideas for improving?

That sounds awesome. beef and cabbage are very filling and savory.

First thing I see is the garlic... in a braise or a crock pot the garlic will loose its potency as it simmers... next time add a tablespoon of chopped to the broth 30 min before eating.

second, acids help bring out the natural flavor of beef. there are a couple things
you can do...

1) add tomatoes
2) add 1 TBSP red wine vinegar. that's not enough to taste but it will accent the beefiness
3) add red wine, this may not be an option depending on how serious you are into the keto
4) Worcestershire, this is an acquired taste so start out small and experiment

lastly play with these....allspice, coriander, mustard seed, caraway. all these spices will add depth to the soup. you will only need to add 1 tsp to change flavor. don't use them all at the same time until you are familiar with how they change the flavor.

remember also the cabbage is flavor neutral, when using a lot of cabbage it will soak up much of your flavor
