You should be starting legs with a compound movement like squats, or leg press. Put leg extensions later in the workout.
The Larry Scott is a biceps machine that can be compared with the Preacher's curl

I can't do squats b/c of my torn ligaments ...

Which ligaments did you tear?
Also does this leave you able to do any compound movements on legs?

The ACL and LCL ligaments are torn. My knee swells up like a balloon when I push too much weight or sometimes when I walk and slip. The knee is really unstable. The orthopedic surgeon told me that a reconstruction of the ACL is possible but in the long run, I'll need a knee replacement ... that's why I decided to postpone the reconstruction. I'm wearing the heavy duty knee braces (from APT) when I need to stay on my feet for too long (at work) or when walking a lot.

Have you asked a physical therapist what exercises he/she would recommend?

My orthopedic surgeon is against bodybuilding ... and all kind of sport (he sees the damages that sport does on people's arms, shoulders, hands, legs ...).
I asked the owner of my gym (a former competitor) and he says that I have to stick to light weights and not do full leg extensions for example.
Nark also told me to lift/push light and to avoid one-leg movements.
The thing is that I can't go completely down on my knees or flex my knees completely without experiencing a terrible pain ...
