Homemade salad dressing - how do you make it ?

I tried making a homemade salad dressing tonight.

The ingredients were balsamic vinegar, Organic EVOO, dijon mustard, minced garlic, and oregano.

It's not bad, but a little dry.

3 T red wine vinegar
2 T fresh-squeezed lemon juice
1 T Sumac
2 tsp. Greek Seasoning
1/2 tsp. Greek oregano
1/2 tsp. ground black pepper
1/2 cup extra virgin olive oil

My better half makes this..she makes it with garlic clove sometimes also

here's a favorite for lite greens like Bibb, add strawberries, mandarin oranges, pecans and low fat cheddar cheese....

ORANGE VANILLA VINAIGRETTE
3 cups Fresh orange juice
¼ cup Rice wine vinegar
¼ cup Honey
¼ cup Fresh lemon juice
1 Vanilla Bean, scraped – adding seeds and bean
6 cups Salad oil

Combine all ingredients except oil. Place in a small pan and Reduce to 2 cups. Cool. Strain into a blender. Slowly add oil while processing.
You van use 1/4 tsp vanilla extract instead of the fresh, this takes a little work but will last in the fridge alot longer than it will be around. tastes great and is pretty healty.

Glad to help.... with something in my wheelhouse...

Basil Vinaigrette
1 c packed fresh basil
2 c apple cider vinegar
4 c salad oil
3 T Dijon mustard
1 T garlic puree
1 T chopped shallots
1 T kosher salt
Blend garlic, shallots. Basil, mustard, salt, and vinegar together. With blender running on medium power slowly add salad oil

Heres another that takes a bit of work and you might want to cut the ingrediants by 1/2...

Roasted Tomato Balsamic Vinaigrette

5 each tomatoes seeded and ¼’d
1 each medium onion ¼’d
5 each garlic cloves fresh
1 ½ cups white wine

Place ¼’d tomatoes and onions into a heavy bottomed saucepan with whole garlic and wine, cover and roast for 20 min. Uncover and return to oven for 10 additional min. remove from oven and cool.

3 cups olive oil
8.5 ounces aged balsamic vinegar
1 Tbsp. Salt & pepper blend
1 ½ cups cold water

In a blender coarse chop the cooled tom/onion, add remaining ingredients except the oil, blend until smooth. Add oil slowly until dressing is well emulsified. Store in a labeled and dated airtight container.
